The Signatory Vintage Glen Spey 17 Years Old 1st Fill Oloroso Cask Strength #3 2007 57.3% ABV 0.7 l in a tin box comes from one of Scotland’s most prestigious independent bottling ranges and showcases the multifaceted character of the rather rarely encountered Speyside distillery, Glen Spey. Signatory Vintage is renowned for its meticulously selected single-cask bottlings, which authentically reflect the character of a distillery. For this edition, a first-fill Oloroso sherry cask from 2007 was chosen, which has had a profound influence on the whisky over the course of 17 years. The whisky was bottled at cask strength at 57.3% vol., without chill filtration and without colouring – offering an authentic insight into the natural quality of the distillate.

Thanks to its long maturation in a fresh Oloroso sherry cask, the Glen Spey develops a distinct depth with clear sherry influences that harmoniously complement the distillery’s rather delicate underlying character. The distillery’s characteristic notes – a light maltiness, subtle herbal notes and delicate fruit – blend with intense aromas of dark fruit, nuts and spicy oak. The whisky displays a powerful structure that nevertheless feels balanced, presenting the Glen Spey style in a particularly expressive form. The high-quality tin box rounds off this single cask bottling, making it an attractive collector’s item for lovers of rare Speyside whiskies.

Tasting Note

Colour: Deep amber with reddish highlights.

Nose: Dark dried fruit, raisins, walnut, spicy oak and the characteristic sweetness of Oloroso.

Palate: Full-bodied and robust, with notes of sherry, nuts, malt, dried fruit and a subtle warmth from the spices.

Finish: Long-lasting, warm, nutty and distinctly influenced by Oloroso.

This single malt is ideal with rich chocolate desserts, figs or nutty biscuits, which elegantly complement its sherry notes. Matured hard cheeses or a chocolate fondant also harmonise perfectly with its intense structure. Enjoyed neat or with a few drops of water, the whisky opens up to reveal additional nuances of spices and dark fruits. The cask-strength bottling particularly reveals its multi-layered, long-lasting depth during quiet moments in the evening.
