Selection of grapes

The quality of grappa depends heavily on the grapes used. Italian winemakers often use regional grape varieties to produce unique and distinctive grappas.

Distillation process

After the wine has been made, the pomace is collected and heated in special distillation equipment. The resulting vapour is condensed and distilled into a high-proof spirit. This process concentrates the aromas and gives the grappa its characteristic strength.

Ageing and storage

Some grappas are bottled immediately after distillation and sold as ‘young’ grappas. Others are aged in wooden casks, which imparts additional flavours and a smoother texture. These aged grappas are often referred to as ‘Vecchia’ or ‘Riserva’.

Grappa should be stored in a cool, dark place. Once opened, the bottle should be sealed tightly and consumed within six months to ensure the best flavour.
