Selection of ingredients

The production of absinthe begins with the careful selection of ingredients. Wormwood, aniseed and fennel are the main herbs used. In addition, other herbs and spices such as coriander, hyssop and lemon balm may be added to refine the flavour.

Distillation process

The herbs are steeped in high-proof alcohol to extract their aromas and active compounds. This is followed by distillation in special copper stills. This process concentrates the aromas and gives absinthe its characteristic strength.

Colouring and storage

After distillation, the absinthe is often coloured by adding additional herbs such as hyssop and lemon balm. This gives it its green colour. The finished absinthe is then bottled and can be enjoyed immediately or stored for further maturation.

Storage

Absinthe should be stored in a cool, dark place to preserve its flavours and quality. An opened bottle should be sealed tightly and consumed within six months.

Serving

Absinthe is traditionally served with a special spoon and a sugar cube. The sugar cube is placed on the spoon, which is held over a glass of absinthe. Cold water is slowly poured over the sugar until it has dissolved and the absinthe turns milky.
