Junmai Daiginjo Genshu represents one of the purest forms of sake and is characterised by a complex aromatic profile. This sake offers aromas of melon, peach, freshly cut grass and sage, whilst on the palate, peach and tropical notes such as papaya, lemon and bitter orange stand out. A subtle umami undertone lends depth.
Sake is classified into six categories based on the degree to which the rice grain is polished. Junmai Daiginjo Genshu, made from high-quality Yamadanishiki rice from Hyogo, is polished down to 38 per cent of the kernel, giving it complex flavour nuances. Compared to wine, which often has 200 flavour nuances, this sake can offer up to 400. With an alcohol content of 16% and a long, harmonious finish, this sake combines sweetness with sophistication.
