The Fernando de Castilla Oloroso Classic Dry Sherry, at 18% ABV, is a full-bodied, dry sherry from the renowned Fernando de Castilla estate in Jerez de la Frontera, the heart of the Andalusian sherry region. This Oloroso displays classic characteristics – intense, nutty, full-bodied and with natural depth. Made from the Palomino Fino grape variety, this sherry is aged for many years using the Solera system in old oak casks, where it undergoes oxidative ageing without the influence of the flor yeast. This results in a wine with great aromatic complexity and a mature, structured character.

Tasting Note

In the glass, the Oloroso displays a deep amber to mahogany colour with golden highlights. The nose is complex, with notes of roasted hazelnuts, dried dates, tobacco, leather, cedar wood and a hint of vanilla and spices. On the palate, it is dry, intensely nutty, with noticeable body, subtle saltiness and a warm, long-lasting finish. The oxidative ageing lends it richness, depth and an exceptionally elegant structure.

Ideal as an aperitif or with savoury tapas, grilled meat, mature Manchego, pâté, game dishes, smoked ham or mushroom risotto. It also impressively reveals its full potential when paired with nutty starters, chestnuts or truffle-based dishes.
