The Bimber EX-BOURBON Oak Casks Single Malt London Whisky Batch No. 4 51.2% is a limited-edition small-batch release from London that combines the Bimber Distillery’s fruit-forward house style with the classic influence of American bourbon casks. For Batch No. 4, selected first-fill ex-bourbon casks made from American oak were blended and bottled in March 2023 at a robust 51.2% ABV. The whisky deliberately bears no age statement. Typical of Bimber is its artisanal production: the barley is processed traditionally and the mash is fermented for an exceptionally long time – around seven days – in open washbacks made of lightly toasted American white oak. This long fermentation supports the characteristic fruity and multi-layered style of the London distillery.

The Bimber Ex-Bourbon Oak Casks Batch 4 is limited to just 7,000 bottles and is bottled without chill filtration or colouring. The bourbon cask maturation complements the natural fruity character with notes of vanilla, toast, spices and oak, whilst green apple and dried fruit lend freshness and depth. It is precisely the combination of London single malt whisky, first-fill bourbon casks and high ABV that makes this bottling particularly appealing to connoisseurs of modern English whiskies. The 0.7-litre bottle, presented in a gift box, combines artisanal production, limited availability and a concentrated cask character to create a distinctive edition within the Bimber Small Batch series.

Tasting Note

Colour: Gold to amber.

Nose: Fresh and complex, with green apple, dried stone fruits and toasted bread, accompanied by cereal notes, vanilla and subtle oak notes.

Palate: Powerful and fruit-driven with orchard fruits and ripe apricot, complemented by vanilla, spices, pepper and toasted oak.

Finish: Long-lasting, slightly sweet and spicy with vanilla, fruit and subtly tart oak.

The Bimber EX-BOURBON Oak Casks Batch No. 4 is particularly well suited to being enjoyed neat at around 18 to 20 °C, although a few drops of still water can open up the robust 51.2% ABV and allow additional fruit and vanilla notes to come to the fore. It pairs well with mature Cheddar, roasted nuts, roast beef or mildly smoked meats, as these complement the spicy bourbon cask character nicely. Apple tart, apricot desserts, crème brûlée or dark chocolate also harmonise well with the fruity, vanilla and toasty aromas. The whisky can also be enjoyed over a large ice cube if a slightly milder profile is desired.
