Hills & Harbour Smooth & Distinctive Scottish Vodka 40% ABV is produced in Galloway, in the south-west of Scotland, with a particular focus on purity, texture and a distinctive character. It is made from local wheat and water, which first undergo an exceptionally long seven-day fermentation process. This extended fermentation period is significantly longer than many standard production times and is intended to give the resulting distillate additional structure and a distinctive mouthfeel. This is followed by several distillation runs, through which the desired purity is gradually achieved. The Scottish vodka was previously available under the name 24 Seven Vodka; however, neither the production process nor the contents have changed as a result of the rebranding.


After distillation, Hills & Harbour Scottish Vodka undergoes a further, elaborate refinement process involving 24 hours of filtration through activated carbon derived from coconut shells. The particularly porous structure of this filter material facilitates the careful purification of the distillate without completely stripping it of its characteristic texture. In doing so, Hills & Harbour deliberately opts for long fermentation and filtration times to combine purity with character and a smooth mouthfeel. The distinctive 0.7-litre bottle also draws inspiration from the Galloway landscape: The frosted, textured glass is reminiscent of weathered sea glass, whilst a natural cork with a naturally formed edge makes each bottle visually distinct. The Scottish grain-to-glass vodka is bottled at 40% ABV.

Tasting Note

Nose: Clean and restrained, with subtle cereal notes and a very clear profile.

Palate: Smooth and balanced with a gentle malty character, a clean texture and a pleasant mouthfeel.

Finish: Clean, smooth and harmonious with a subtle hint of grain.

Hills & Harbour Scottish Vodka is particularly well suited to being enjoyed neat and well chilled, or over a large ice cube. Its clear, smooth structure also makes it an excellent base for a Vodka Martini, Vodka Soda or Moscow Mule. Culinary pairings include smoked salmon, oysters, seafood or mild cheeses. This characterful yet understated vodka also pairs well with savoury snacks and smoked dishes.
