Collection: Aeijst Gin

Aeijst is made from 100% organic ingredients. Nine carefully selected botanicals, including juniper, coriander, lavender, ginger and lemon peel, are tasted individually and combined to create a harmonious blend. Maceration takes place directly in pure wheat alcohol, followed by distillation in a 400-litre copper still. The gin is then left to rest for at least four weeks in stainless steel tanks to allow its flavours to harmonise.

The distillery is located in a former winegrower’s house in St. Nikolai im Sausal. Here, the Thomann family combines traditional distilling skills with modern craftsmanship and a deep connection to the local region.
