Agave de Cortés Mezcal is produced using traditional methods that have been practised in Oaxaca for centuries. The agave hearts, also known as ‘piñas’, are roasted in earth ovens, which gives the mezcal its characteristic smoky aromas. After roasting, the piñas are crushed and fermented in wooden barrels before the mezcal is distilled in copper stills.
