The production of Jack Daniel’s Whiskey has followed time-honoured methods for generations and begins with a carefully balanced mash made from maize, rye and malted barley. The water comes from Cave Spring Hollow – a limestone-rich spring that provides exceptionally pure, low-mineral water. Distillation takes place traditionally in copper stills and forms the basis for the smooth, full-bodied character of the whiskies.

Charcoal Mellowing – the Lincoln County Process

A key feature of the production process is what is known as charcoal mellowing, also known as the Lincoln County Process. In this process, the freshly distilled whiskey is slowly filtered through a thick layer of sugar maple charcoal. Maturation in proprietary casks
