The Heaven Hill Distillery uses exclusively 200 American oak casks for ageing Larceny Bourbon. The process is overseen by Master Distiller Denny Potter, who sets the optimal alcohol content at 46 per cent by volume (94 proof) for Larceny Kentucky Straight Bourbon. Unlike many rye-based bourbons, Larceny uses wheat in its mash bill, resulting in a milder flavour profile.

The name ‘Larceny’, meaning ‘theft’, refers to John E. Fitzgerald, who is said to have taken whisky from the casks without authorisation. Larceny whisky is renowned for its rich bouquet, resulting from an ageing period longer than that required by law, and offers a rich tasting experience for connoisseurs of matured bourbons.
