In the Venetian dialect, ‘Sarpa’ means grape marc, and it is precisely this – extracted from the skins of fine Merlot and Cabernet grapes – that forms the basis of this grappa. Sarpa di Poli grappa is gently distilled in small copper stills, preserving its aromatic clarity and authenticity.
