Today, the distillery is run by his descendants, the four siblings Jacopo, Geampaolo, Barbara and Andrea Poli. Poli Barrique Due Barili is crafted from a blend of Prosecco pomace and pure pomace, giving it a unique, fresh base. After distillation, this grappa is aged for two years in French barriques, imparting subtle notes of wood and vanilla. This is followed by a further two years’ ageing in PX sherry casks, which lend the grappa additional depth and a remarkable aroma of dried fruit and sweetness. This dual ageing in oak and sherry casks results in a complex, balanced profile that combines both soft and intense flavours.

Tasting Note

Colour: Golden amber with a hint of mahogany.

Nose: Complex aromas of vanilla, caramelised nuts, dried fruit and a subtle hint of wood and sherry.

Palate: Smooth and well-balanced, with sweet notes of caramel, dried fruit and subtle spices that blend harmoniously with the light oak notes.

Finish: Long-lasting and elegant, with warm, slightly spicy notes of oak and fruit.
