The Cedar Ridge Distillery was opened by Jeff Quint and his wife Laurie in 2005. In 2009, Kolin Brighton joined them to oversee the distillation process. Only local ingredients are used, such as the corn grown on the farm. The composition of 74% maize, 14% malted rye, 12% malted barley and maturation in new oak barrels are just some of the key features of this bourbon. The unusual thing about this bourbon whiskey is the rather unusual method of maturation, as the 'Angel's Share' is significantly higher than usual due to accelerated maturation. In the USA, this Angel's Share value is usually 10 - 12%, but with Cedar Ridge Iowa Bourbon Whiskey it is around 18%.

Tasting Note

Colour: Warm mahogany.

Nose: Complex, subtle, freshly cut grass, caramel, cereals.

Flavour: Dry, caramel, peppercorns, roasted cereals.

Finish: Langs, well balanced, notes of spices.

Best enjoyed neat at room temperature.

By the way: A perfect accompaniment to Parma ham!
