The botanicals are not cooked, but gently extracted from alcohol vapour, which preserves their fresh, unadulterated and intense aromas. From the subtle pungency of cubeb pepper from Java to the spicy depth of grains of paradise from West Africa, the result is a harmonious interplay that gives the gin its smooth, complex and balanced character.
