Lind & Lime Gin is a characterful gin from Leith in Edinburgh, Scotland, which focuses on a deliberately limited selection of botanicals and precise production methods. Its three main flavour components are juniper, fresh lime zest and pink peppercorns. A total of seven botanicals are used: juniper, coriander, angelica root, liquorice, orris root, pink peppercorns and lime zest. An organic neutral grain spirit serves as the base. Six of the seven botanicals are placed in a 1,000-litre copper still together with the spirit and water, and left to macerate for 16 hours prior to distillation. The pink peppercorns complement the juniper and lime with spicy, citrusy and fruity notes.

A distinctive feature of Lind & Lime Gin from Edinburgh is the way the limes are processed. Organic limes are peeled by hand, and the fresh zest is placed in an aroma basket above the still the following morning. During the distillation process, which lasts around nine hours, the rising vapours pass through the lime zests and absorb their fresh citrus notes. The distillation is powered by 100 per cent green electricity. The gin is then left to rest for at least two weeks before being bottled directly at the distillery and labelled by hand. Lind & Lime also takes a consistent approach to packaging: natural corks, plastic-free tamper-evident seals and completely plastic-free packaging are all part of the concept. With an alcohol content of 44 per cent, Lind & Lime Gin combines traditional juniper character with modern, artisanal gin production in Leith.

Tasting Note

Colour: Clear.

Nose: Fresh juniper and intense lime zest with citrusy, slightly earthy and delicately spicy notes.

Palate: Juniper-driven and fresh with zesty lime, warming spice from pink peppercorns, and subtle floral and earthy nuances.

Finish: Dry, fresh and spicy with lingering juniper, citrus notes and a subtle peppery warmth.

Lind & Lime Gin is particularly well-suited to a classic gin and tonic, where a subtle tonic water does not overpower the juniper and lime character. A fresh lime zest makes for an ideal garnish, complementing the gin’s central citrus aroma. The clean combination of juniper, lime and pink pepper is also well-suited to classic gin cocktails such as the Gimlet, Martini or Tom Collins. On the culinary front, light fish dishes, seafood or Mediterranean starters pair well with its fresh, dry profile.
