Noilly Prat Original Dry is a legendary French vermouth with an alcohol content of 18 per cent by volume, prized worldwide for its dry style and distinctive aroma. Noilly Prat is renowned for its dry vermouth and is regarded as the epitome of classic French aperitif culture. This time-honoured house was founded as early as 1813 and has been one of the world’s leading vermouth producers ever since. Since 1843, production has continued unchanged according to the original recipe – a tribute to the brand’s artisanal precision and centuries-old expertise.
Noilly Prat Original Dry is produced in Marseillan, on the French Mediterranean coast, using a process that is unique worldwide. The base wines, made from the regional grape varieties Picpoul and Clairette, are aged for 12 months in 600-litre oak barrels under the open sky. This open-air ageing allows for natural air exchange, which lends the wine an oxidative depth and its characteristic, slightly nutty note. The wine is then infused with a blend of 20 different herbs and spices sourced from four continents. These include, amongst others, camomile, coriander from Morocco, bitter orange from Tunisia, cardamom from India and elderflower. This blend gives Noilly Prat Original Dry its refined spice and unmistakable character.
Tasting Note
In the glass, Noilly Prat Original Dry displays a clear, pale golden colour with greenish highlights. On the nose, elegant aromas of dried herbs, citrus zest, camomile and delicate spice unfold. On the palate, it is dry, balanced and complex, with nuances of bitter orange, fresh apple, wormwood and a subtle mineral salinity. The finish is long, herbaceous and pleasantly tart, with a finely structured depth.
Noilly Prat Original Dry is an essential ingredient in classic cocktails such as the Dry Martini, Gibson or Bamboo. Served neat over ice with a twist of lemon, it reveals its elegant aromas and makes an excellent, stylish aperitif. In fine dining, it is often used to deglaze fish and poultry dishes, as well as to refine light sauces and risottos. In French cuisine in particular, it is regarded as an indispensable secret ingredient.
