This rum is made from molasses and undergoes a three-day fermentation process that reflects the typical flavour of the Caribbean. The rum is initially matured for four years in bourbon casks in Barbados, during which time it develops a solid foundation of woody and vanilla aromas. It is then matured for five and a half years in ex-Cognac casks made of French oak, which imparts additional complexity and fruity depth.

What makes the 2021 edition special is the four-month finish in Oloroso sherry casks, which adds an extra dimension to the rum. Oloroso sherry, known for its oxidative ageing, is a full-bodied, robust and dry sherry that imparts an intense, spicy and dry sherry note to the rum. This unique maturation process results in a rum that combines both the freshness and sweetness of the Caribbean with the depth and complexity of an excellent sherry.

Palate: Full-bodied and complex, with flavours of caramel, toasted nuts, ripe plums and oak, an elegant sherry sweetness with spicy notes and a hint of cinnamon and chocolate.

Finish: Lang and warming, with a perfectly balanced blend of oak, fruity sweetness and a lingering, dry sherry note.
