The Antica Distilleria Domenico Sibona is situated in the Roero region, in the municipality of Piobesì d'Alba, a few kilometres from Alba.

What makes Sibona grappa special is that it holds a special distilling licence, UTF No. 1.

It is made from Nebbiolo pomace from freshly harvested grapes, which are selected by Sibona during the harvest.

Distillation takes place entirely in-house in copper stills, whilst ageing occurs over a long period in stainless steel tanks. An initial maturation of two years in medium-sized barrels made of classic oak, followed by a further six months in port wine casks, completes this grappa.

Ageing in port wine casks was pioneered by Sibona as an innovation and produces high-quality results.

Tasting Note

Colour: Deep amber.

Nose: Intense, full-bodied, notes of vanilla, tobacco, ripe fruit and oak.

Palate: Smooth, full-bodied, elegant, intense oak, notes of blackberries, redcurrants and orange peel.

Finish: Long-lasting, with port-like aromas.

Serving recommendation: Serve at 18 °C in a classic tulip or balloon glass, with or without a stem.

A perfect accompaniment to dried fruit, walnuts, almonds, desserts, chocolate, mature cheese or a cigar.
