Two Stacks THE FIRST CUT Irish Whiskey is a complex blended Irish whiskey, through which Two Stacks reinterprets the historic Irish tradition of whiskey bonding. In the past, it was common practice in Ireland for so-called ‘whisky bonders’ – including pub owners and grocers – to source distillates from various distilleries, store them themselves, blend them together and bottle them under their own name. Two Stacks Whiskey draws directly on this tradition by allowing selected whiskies to mature further in its own casks before blending them into unique blends. ‘The First Cut’ was the brand’s first release to be produced in larger quantities, with the bottles being filled and labelled by hand. The Irish whisky is bottled at 43 per cent in a 0.7-litre bottle.


Of particular interest is the transparent composition, comprising five different Irish whiskies: The blend consists of 40 per cent grain whisky from virgin oak casks, 40 per cent grain whisky from ex-bourbon casks and 8 per cent pot still whisky from ex-Oloroso sherry casks. Added to this are 10 per cent double-distilled single malt from ex-bourbon casks and 2 per cent peated single malt from ex-bourbon casks. Two Stacks The First Cut thus combines grain, pot still and single malt whisky, as well as different cask types, in a precisely documented composition. It is precisely this disclosure of the individual components that underlines Two Stacks’ modern approach and makes the blend an interesting choice for lovers of Irish whiskies with a transparent composition.

Tasting Note

Colour: Amber.

Nose: Fruity and well-balanced with peach and vanilla, accompanied by toasted wood, shortbread and subtle notes of grain.

Palate: Full-bodied with toasted wood, fresh lemon zest and toffee, complemented by a delicately spicy note of white pepper.

Finish: Long-lasting and spicy with smoky caramel and a subtle hint of peated malt.

Two Stacks The First Cut Irish Whiskey is ideal both neat at room temperature and on the rocks, allowing the various components of the blend to come through clearly. Thanks to the combination of grain, pot still and single malt, it also serves as a versatile base for classic Irish whisky cocktails, such as a whisky sour or an Old Fashioned. Culinary pairings include mature Cheddar, roasted nuts or grilled meat, which complement the spicy and slightly smoky notes. Caramel or shortbread desserts, on the other hand, perfectly bring out the sweeter aspects of the whisky.
