González Byass NECTAR Pedro Ximénez Sherry Dulce is an intense, full-bodied dessert wine from the renowned González Byass bodega in Jerez de la Frontera, Andalusia. This sweet sherry is made from 100 per cent of the traditional Pedro Ximénez grape variety. After harvesting, the grapes are sun-dried, which allows them to develop a high sugar content and acquire a particularly concentrated aroma. The wine is aged using the classic Solera system, which is typical of the sherry region, and allows the wine to mature in a controlled manner, developing depth and complexity.

With an alcohol content of 15% ABV and its characteristic, almost syrupy consistency, Nectar Pedro Ximénez is a powerful example of its kind. The 0.75-litre bottle is ideal for savouring neat in small sips, as an accompaniment to dessert or for creative use in fine dining. Tasting Note

In the glass, the sherry displays a dark mahogany brown colour with golden highlights. On the nose, rich aromas of raisins, figs, dates and prunes unfold, complemented by notes of caramel, cocoa and lightly toasted nuts. On the palate, it is syrupy, velvety and smooth, with pronounced sweetness, a dense texture and a long, aromatic, creamy finish.

Serving temperature: 12–14 °C

González Byass Nectar PX is excellent as a classic dessert wine – ideal with blue-veined cheeses such as Roquefort, Gorgonzola or Stilton. It is also a perfect accompaniment to chocolate desserts, vanilla ice cream, caramelised nuts or chocolate mousse. In the kitchen, it lends a subtle depth to sauces for game dishes or stews.
