The Fernando de Castilla Palo Cortado Antique is a rare, top-quality sherry with an alcohol content of 20 % vol., which forms part of the house’s premium range and is presented in an elegant gift box (GB). This rarity from the traditional house of Fernando de Castilla fascinatingly combines the fresh elegance of an Amontillado with the powerful depth of an Oloroso – a style regarded by sherry connoisseurs as particularly mysterious and sought-after.

It is based on Palomino Fino, the classic grape variety of the Jerez region. Following an initial maturation under the flor yeast, this Palo Cortado undergoes oxidative ageing in old oak casks using the Solera system, developing into a complex, concentrated sherry full of character and expression. Every drop of this sherry reflects the traditional craftsmanship and decades-long ageing tradition of Andalusia.

Tasting Note

In the glass, the Palo Cortado Antique displays an intense amber colour with coppery glints. On the nose, complex aromas of hazelnuts, orange zest, fine spices, dried figs and subtle wood smoke unfold. On the palate, it is dry, silky and powerful all at once, with brilliant structure, elegant acidity, a slightly salty minerality and a long, profound finish. The wine combines precision, maturity and aromatic depth at the very highest level.

Ideal as a contemplative stand-alone or paired with fine cuisine: excellent with Iberian ham, game terrines, truffle-infused dishes, mature hard cheeses, mushroom risotto or even Asian-spiced poultry.
