Plantation Rums have long since ceased to be an insider’s tip. These excellent rums are sourced mainly from the Caribbean and South America, and are then brought to France, where they receive their finishing touches. In Ars, France, the rum is subsequently aged for several months in small, decommissioned oak cognac casks. This method of ageing is known as ‘double ageing’, a technique that was already in use in the 18th and 19th centuries.

This rum is traditionally distilled in a column still. It is aged for 7 years in bourbon casks before being finished for 12 months at the Château de Bonbonnet in old Ferrand cognac casks.
