In Ars, France, they undergo the renowned ‘double ageing’ process in decommissioned oak Cognac casks, a method with roots dating back to the 18th and 19th centuries.

The ageing process for Plantation Rum Barbados 8 Years Old begins with five years’ ageing in bourbon casks, which give it an ester content of 38 g/hL, followed by a further year in FERRAND casks. The final refinement takes place over two years in port casks, giving it a distinctive and characteristic finish. Bottled in 2023 with a dosage of 7 g/L, this rum is characterised by a complex flavour profile and an unmistakable note.
