Distilled from carefully selected raw materials from the Caribbean and South America, these rums are sent to France, where they undergo their final refinement in the historic town of Ars. Here, they are stored for several months in decommissioned oak cognac casks, a process known as ‘double ageing’, which is deeply rooted in the rum-making traditions of the 18th and 19th centuries.

Plantation Rum Barbados 2014 begins its maturation process with six years’ ageing in bourbon casks, which give it an impressive ester content of 87 g/hL. It is then further refined for two years in FERRAND casks, which harmonises and intensifies its aromas. The process is rounded off with a one-year maturation phase in Riversaltes wine casks, which give the rum its unmistakable and characteristic finish. In the year of bottling, 2023, it was finished with a dosage of 8 g/L to emphasise the depth and complexity of its flavours.
