This exquisitely matured rum embodies the masterful combination of tradition and innovative finishing that delights connoisseurs and enthusiasts alike.

Selected from the finest distillates of the Caribbean and South America, these rums undergo their final finishing in Ars, France. There, they are treated according to the historic ‘double ageing’ process, in which the rums are stored for several months in decommissioned oak Cognac casks. This method, which dates back to the 18th and 19th centuries, is renowned for deeply refining the flavours.

The ageing process for Plantation Rum Fiji 2011 begins with seven years’ ageing in bourbon casks, which develop a distinctive ester content of 47 g/hL. A subsequent four-year maturation in FERRAND casks further balances and refines its flavours. A final year in Marsala casks gives the rum its distinctive finish, before it is bottled in 2023 with a dosage of 0 g/L to preserve its pure and unadulterated flavour notes.
