The Demerara Distillery in Guyana has been deeply rooted in the history of sugar and rum production since the 17th century. It is renowned worldwide for the wooden pot still method and the high-quality rums produced using this process.

A particular highlight is the rum distilled in 2005 from the rare Versailles Single Wooden Pot Still, the last functioning still of its kind in the world.

The Versailles Special Cask Finish Rum was initially matured for eight years in selected American ex-bourbon casks and then, for its ‘Special Cask Finish’, spent a further eight years maturing in fine French oak casks. These casks had previously held ruby-red port wines from a single quinta in the Douro Valley port region of Portugal.

Thanks to this carefully selected cask finish, the rum develops a complex and exceptionally flavourful profile that is distinctly noticeable on the palate.

Tasting Note

Nose: Fruity, complex.

Palate: Complex, with woody notes and ripe fruit.

Finish: Long-lasting.
