Edradour, recognised as Scotland’s smallest traditional distillery since its foundation around 1825, operates largely using 19th-century methods. As a unique example of the old farmhouse distillery style, Edradour produces 12 casks of whisky each week. Owned since 2002 by Andrew Symington, the founder of Signatory, Edradour has expanded its range to include new releases, including peated malts under the name Ballechin.
Signatory founder Andrew Symington works closely with the South Tyrolean winery St. Michael-Eppan, which has led to a fascinating range of single-cask bottlings from red wine casks. In this particular case, a distinctive Merlot was used to pre-season the casks, imparting unique aromas and characteristics to the whisky.
This collaboration between Signatory and St. Michael-Eppan impressively demonstrates how innovative partnerships and careful cask selection can result in exceptional whiskies full of character.
