The olives from our quintas are harvested according to strict quality standards, with imperfect olives being sorted out by hand in order to process only the best fruit. After harvesting, the olives undergo a natural preparation process in which they are treated exclusively with water and salt to preserve their authentic flavour and freshness.
The olives are then pasteurised, which allows them to be preserved for up to 24 months without the use of artificial preservatives. This gentle process ensures a high-quality end product that impresses with its natural flavour and longevity.
