Fifteen years ago, David Vitale, founder of the Starward Distillery, made a groundbreaking and risky decision that would change the character of his whiskies forever. Instead of taking the conventional route, which traditionally involves maturing in bourbon casks, he made a conscious decision to mature his distillates in red wine casks from the Melbourne region. Today, Starward is known worldwide and is regarded as a leader in the production of whisky finished in red wine casks.

But the intriguing question remains: what would have happened if Vitale had taken the traditional route back then? Whisky lovers can now answer this question for themselves, as with the Starward Bourbon Casks #2, the distillery is offering a single malt that has been matured exclusively in bourbon casks for five years. This special edition builds on the success of the first release from 2018, which sold out quickly.

Tasting Note

Colour: Amber.

Nose: Tropical fruits, buttered toast, citrus fruits.

Palate: Tropical flavours, buttered toast, lemon cream, sweet spices.

Finish: Long-lasting.
