Since 1635, when Andrea Bottega began cultivating vines in the hills near Refrontolo, the Bottega family has continued to grow. After taking over the management of their own land, Aldo Bottega revolutionised grappa production by introducing the first single-varietal grappa. The Distilleria Bottega, which he founded in 1977, is now housed in a renovated 17th-century farmhouse situated in Bibano di Godega di Sant’Urbano and surrounded by 10 hectares of vineyards.

The carefully selected grape varieties – Glera, Chardonnay and Pinot – are harvested by hand and gently pressed immediately after the harvest, with the must being separated from the grape skins straight away. The sparkling wine is produced directly from the freshly extracted must, with fermentation taking place at a controlled temperature of 14 degrees. After fermentation, the wine is refined through cold stabilisation for around a week.

This is followed by filtration and bottling to preserve the freshness and quality of the sparkling wine.

Tasting Note

Straw-yellow in colour with fine bubbles in the glass. Refined and fruity on the nose, with aromas of apples and peaches. Very smooth and harmonious on the palate, elegant and lively with a pleasant spiciness. A long-lasting finish.

Acidity: 5–6.50 g/l

Serving temperature: 5–6 °C

The Bottega Millesimato pairs very well with light starters and fish dishes.
