Produced in one of the world’s most environmentally friendly distilleries in the Dominican Republic, this rum is made not from molasses but from freshly pressed sugarcane juice. The meticulous ageing process takes a total of twelve years. The rum is first aged for eleven years in ex-bourbon casks before being refined for a further year in cognac casks. This process ensures a perfect balance of sweet, fruity and spicy flavours with a subtle woody note. Sustainability remains a key element throughout: the distillery generates its own green electricity from sugarcane biomass, uses the vinasse as a natural fertiliser and captures at least 50 per cent of the CO₂ produced for reuse.
