Ron Dos Mares Vintage 2005 is an exceptional premium Caribbean rum that impresses with its clear provenance, selective ageing and aromatic depth. Produced from sugar cane molasses and distilled in continuous column stills, this vintage rum originates from the historic Hacienda San Isidro in Panama. There, it was aged under tropical conditions in American oak casks before being bottled as a strictly limited and numbered edition following careful selection by Rogelio Castillo, Head of Ageing and Quality Assurance at Valera Hermanos – and, of course, certified for its age.

With an alcohol content of 45.3% vol., the Ron Dos Mares Vintage 2005 unfolds an expressive yet finely balanced spectrum of aromas. Thanks to its long ageing, it develops a complex composition of fruity sweetness, spice and toasty wood notes, which are brought to the fore perfectly by the warm climate and the artisanal selection of casks. A rum limited to a total of 3,992 bottles for discerning connoisseurs, which shows its strengths both when enjoyed neat and as part of exclusive tastings.

Tasting Note

Colour: Mahogany with a deep sheen.

Nose: Deep, aromatic notes of raisins, fine cocoa, dark sugar and subtle toasted wood.

Palate: Complex and elegant, with dried fruit, honey-sweet figs, orange zest, a hint of coffee and warm spices.

Finish: Silky, balanced and long-lasting, with a delicate sweetness, subtle woodiness and an elegant, warm aftertaste.

The Dos Mares Vintage 2005 should be enjoyed neat at room temperature – ideally in a bulbous tasting glass to allow its aromatic depth to unfold fully. A few drops of water can help to open up the complex profile even further. It pairs superbly with dark chocolate, roasted nuts, mature hard cheese or as an accompaniment to a mild cigar.
