The Penfolds BIN 707 Cabernet Sauvignon 2019 is a meisterwerk of Australian winemaking and ranks amongst the most exclusive and sought-after Cabernet Sauvignons in the world. It epitomises uncompromising quality, powerful elegance and exceptional ageing potential. As a single-varietal Cabernet Sauvignon, this wine is produced only in outstanding vintages and is sourced exclusively from selected Lager in South Australia, such as the Barossa Valley, Coonawarra and McLaren Vale.

This wine focuses clearly on a single grape variety – 100 % Cabernet Sauvignon – and impresses with the utmost expression and structure. Only the very best grapes are used for BIN 707. Following selective harvesting, the grapes are transported swiftly to the winery, where they are gently processed, fermented in small wooden barrels and then aged for 20 months in new American oak barrels. This meticulous process preserves the aromatic depth and supports the wine’s complex development.

Tasting Note

A deep, opaque purple-red with a dark centre. On the nose, complex aromas of blackcurrants, blueberries, coffee and mocha unfold, underpinned by mineral notes and subtle oak. On the palate, the wine is dry, powerful and multi-layered, with dense fruit, precise acidity and a velvety tannin structure. The finish is long, concentrated and characterised by elegant spice – a red wine with impressive depth and ageing potential.

Best served at 15–18 °C. The Penfolds BIN 707 Cabernet Sauvignon 2019 is an excellent accompaniment to roast goose breast with ginger red cabbage, lemon and chilli chicken with bulgur, or baked sheep’s cheese parcels. It also pairs beautifully with mature hard cheeses, braised beef, game dishes or fine steaks.
