The AI GALLI Prosecco Extra Dry Millesimato DOC 2024 is an Italian Prosecco DOC made from 100 per cent Glera grapes sourced from the estate’s own vineyards in Pramaggiore. The vines grow on medium-textured, clay-rich soils, which form the basis for this elegant sparkling wine. After hand-harvesting, the grapes are gently pressed and the must is cold-settled. The first fermentation then takes place in stainless steel tanks at a controlled temperature of 18 to 20 °C for around ten days using selected yeasts. In this way, AI GALLI combines meticulous work in the vineyard with precisely controlled winemaking.


For the second fermentation, the base wine is transferred to a pressure tank and fermented for 18 to 20 days at 14 to 16 °C using active yeasts. Once a pressure of around 6 bar has been reached, the wine is cooled to -4 °C to halt fermentation and initiate stabilisation. This is followed by approximately one month’s storage at a controlled temperature, before the wine is filtered and bottled under isobaric conditions. As a Millesimato 2024, this Prosecco Extra Dry from Veneto combines a clearly defined vintage with the classic Glera grape variety and a finely balanced sparkling wine production process. With an alcohol content of 11% in the 0.75 l bottle, it is designed to be enjoyed fresh and young.

Tasting Note

In the glass, it displays a pale straw-yellow colour with fine, long-lasting bubbles. On the nose, the Prosecco is distinctly floral, with notes of acacia blossom and wisteria, complemented by subtle hints of white-fleshed fruit. On the palate, it is smooth, full-bodied and elegant, with a lively freshness that complements the broad spectrum of flavours. The finish is harmonious, fresh and pleasantly balanced.

The AI GALLI Prosecco Extra Dry Millesimato DOC 2024 is particularly versatile and is ideal as an aperitif as well as for receptions, celebrations and summer occasions. Culinary pairings include risotto, light soups and fish dishes, particularly seafood and shellfish. This Prosecco also makes for an easy-going accompaniment to light starters. It is best served well chilled at around 6 to 8 °C.
