AI GALLI Prosecco Extra Dry DOC is an elegant, fine sparkling wine made from 100% Glera, which comes from the company's own vineyards in Pramaggiore - a particularly quality-orientated growing area in eastern Veneto. The vines grow on medium-density clay soils, which gives the Prosecco additional structure and finesse. This sparkling wine is produced using the Charmat method, which gives it its fresh perlage and aromatic brilliance.

The hand-picked grapes are gently pressed and cold decanted to preserve the purity of the flavours. The must is fermented at 18-20 °C on selected yeasts for around 10 days. The second fermentation for the formation of foam takes place in pressurised tanks at 14-16 °C for 18-20 days. After reaching a pressure of approx. 6 bar, the temperature is lowered to -4 °C to stop the fermentation process and stabilise the wine. This is followed by one month of ageing on the fine lees before the Prosecco is filtered and bottled under isobaric conditions.

With an alcohol content of 11% vol., this Extra Dry Prosecco stands for balanced freshness, fine fruit and plenty of elegance - a typical representative of the Venetian style that impresses with its variety of flavours and gentle perlage.

Tasting Note

The Prosecco presents itself in the glass in a light straw yellow colour with a fine, long-lasting perlage. The nose reveals a distinctly floral bouquet, characterised by acacia flowers, wisteria and a hint of white-fleshed fruit such as pear and apple. Soft, full-bodied and elegant on the palate, with a stimulating freshness that finely balances the fruity and floral spectrum of flavours. A harmonious sparkling wine with a pleasant length and clear style.
