AI GALLI Prosecco Brut DOC is a fine, elegant sparkling wine made from 100% Glera, which comes from the AI GALLI winery's own vineyards in Pramaggiore - a particularly renowned zone in eastern Veneto. The vines grow on medium-density clay soils, which gives the Prosecco freshness, structure and a subtle minerality. This Prosecco is produced with the utmost care using the Charmat method and is an authentic representative of a modern, fruit-driven brut style.

The grapes are harvested by hand, gently pressed and cold decanted. The must then ferments for 10 days at 18-20 °C on carefully selected yeasts. The base wine is then fermented further in pressurised tanks to create a foam - 18 to 20 days at 14-16 °C. Once the desired pressure of approx. 6 bar is reached, the temperature is lowered to -4 °C to stop fermentation and stabilise the wine. Further storage on the lees for a month promotes fineness and flavour. This is followed by isobaric bottling.

With 11% alcohol by volume, this Prosecco is particularly easy to drink, balanced and elegant - a versatile pleasure for many occasions that impresses with its precision craftsmanship and varietal typicity.

Tasting Note

In the glass, the AI GALLI Prosecco Brut has a light, straw-yellow colour with a fine, persistent perlage. The nose reveals pure, fruity aromas of Renette apple and peach blossom. On the palate, the Prosecco is smooth, harmonious and pleasantly fresh, with a fine mousse that elegantly emphasises the fruity and floral impressions.

This Prosecco is an ideal aperitif, but is also an excellent accompaniment to light starters with cheese or fish, as well as to fine Mediterranean dishes.
