The Ardara Single Malt Irish Whiskey Edition 2025 46% Vol. 0.7 litre marks the official launch of Ardara Distillery in County Donegal - one of Ireland's newest and most exciting distilleries. Founded in 2022 by Sliabh Liag Distillers, it represents the rebirth of an age-old Donegal tradition: the production of heavily peated, handcrafted Irish whiskeys. This edition is the first single malt from Ardara and embodies the vision of continuing Ireland's smoky whiskey history in a modern form.


With a phenol content of 55 ppm, the Ardara single malt is one of the smokiest Irish whiskeys ever. The strong peat flavour comes from 100% malted grain, which is processed in the traditional triple distillation process in copper pot stills. The distillery uses the sustainable "all grains in" process, in which all the milled grain is distilled - a process that minimises waste and protects the environment. The by-products are used for methane production; there are also plans to collaborate with a regional composting plant in the future. In this way, Ardara combines innovative thinking with environmentally conscious production and traditional craftsmanship.


Maturation takes place in a combination of bourbon, virgin oak and oloroso sherry casks, which are stored in the Solera-Vat system to ensure depth, balance and consistent quality. This cask composition gives the whiskey structure, fullness and a harmonious combination of peat, fruit and sweetness. Bottled at 46% vol., non-chill-filtered and without colouring, the Ardara single malt presents itself as a modern, sustainable and characterful representative of the new Irish whisky culture.

Tasting Note

Colour: Light gold with a slight copper tinge.

Nose: Sweet cereal and biscuit notes with dried figs, coconut, sultanas and fine pipe smoke.

Flavour: Soft sweetness of poached pears, toasted coconut, almonds, leather and tobacco leaves; accompanied by campfire smoke and delicate apple.

Finish: Smooth, smoky and warm with notes of baked apple and lingering warmth.
