Hillinger HILL 2 2023 is a sophisticated Austrian white wine that combines the modern style of Hillinger with depth, precision and elegance. This characterful cuvée of 80% Sauvignon Blanc and 20% Chardonnay is organically grown and stands for uncompromising selection and elaborate ageing, which gives the wine structure and exceptional complexity. The limestone-dominated vineyards provide a clear minerality that forms the foundation of this Burgenland white wine.


The vinification follows a particularly sophisticated concept: spontaneous fermentation in used Burgundian barrique barrels, followed by full lees ageing and a long fine lees ageing period totalling around 24 months. The cuvée then matures further in new and used barriques, whereby the use of wood remains present but deliberately discreet. This careful ageing gives the Hillinger HILL 2 its depth, its quiet strength and a storage potential of five to eight years. With 12.5% alcohol, this Sauvignon Blanc Chardonnay is precise, balanced and characterised by great inner tension.

Tasting Note

In the glass, the Hillinger HILL 2 2023 is a dark straw yellow colour with a light, clear rim. On the nose, the wine is multi-layered with blackcurrants, mown grass, a hint of lavender and stable yellow fruit complemented by fine brioche notes. On the palate, chalky minerality, precise fruit structure and subtle barrique spice combine to create a dense, elegant overall picture. The finish is structured, harmonious and long-lasting.

The Hillinger HILL 2 2023 is an extremely versatile food companion for sophisticated cuisine. It is particularly harmonious with porcini mushroom risotto with red mullet, fillet of beef with bush beans, rack of wild boar with mango chutney or trout with fresh lamb's lettuce. This Austrian white wine also unfolds its structure and depth with bouillabaisse, strong fish dishes, seafood or finely flavoured Mediterranean cuisine. Hillinger HILL 2 is also ideal for special moments of enjoyment where a complex Sauvignon Blanc Chardonnay with ageing potential and a clear style is required. The recommended drinking temperature of 10 to 12 °C supports the optimal development of the flavours.
