The Hillinger Cabernet Sauvignon 2021 is a structured and long-lasting Austrian quality red wine that interprets the international Cabernet Sauvignon grape variety with a Burgenland signature. Produced by the renowned Leo Hillinger winery, this vintage stands for depth, maturity and precise barrel ageing.


The grapes are fermented in steel tanks and remain on the skins for five weeks to achieve maximum structure and extraction. The wine is aged for 24 months in barriques, one third of which is new French oak and two thirds used French oak. This combination ensures complexity, elegance and a finely balanced tannin structure. With 13.5% alcohol by volume, the Cabernet Sauvignon 2021 is both powerful and balanced. The dry style is carried by a well-supporting acidity. The ageing potential of up to 15 years emphasises its structure and maturity.

Tasting Note

In the glass, the Hillinger Cabernet Sauvignon 2021 has a dark garnet red colour with a purple rim. Intense cassis unfolds on the nose, accompanied by cedar wood. Flavours of dark berries, ripe raspberries and pickled fruit develop on the palate, complemented by a hint of bourbon vanilla and dark chocolate. The tannin is ripe, strong and structured. The finish is long, animating and characterised by a clear structure.

The Hillinger Cabernet Sauvignon 2021 is an ideal accompaniment to hearty game dishes, steaks, fillet of beef or rack of lamb. This barrique-aged red wine from Burgenland also harmonises perfectly with mature hard cheese or intense braised dishes. Served at 12°C, it develops its structure and aromatic depth to optimum effect and is suitable for sophisticated menus as well as for the conscious enjoyment of a Cabernet Sauvignon that can be stored.
