The Habitation Velier RAINFOREST Philippines Pure Single Rum 2024 is an exceptional release from Habitation Velier that highlights the unique character of Philippine rum production. The rum was distilled in the Philippines in 2024 and produced entirely in pot stills, which is why it is classified as a Pure Single Rum. The distillate was then matured for 20 months in the tropical climate of the Philippines in selected ex-Chardonnay casks. The intensive tropical ageing resulted in an Angel’s Share of over 10 per cent during this comparatively short maturation period. It was finally bottled in 2026 at a robust 58 per cent in a 0.7-litre bottle, complete with gift packaging.

The combination of 100 per cent pot-still distillation, tropical maturation and ex-Chardonnay casks makes the Rainforest a particularly distinctive edition within the Habitation Velier portfolio. The influence of the former wine casks complements the original sugar cane character with a pronounced fruitiness and a delicate woody structure. The Rainforest 2024/2026 is bottled at a high alcohol content of 58% vol., without colouring and without chill filtration. No sugar is added either. This Philippine pure single rum is therefore aimed in particular at connoisseurs seeking authentic pot-still rums with a clearly traceable production process and unusual cask maturation.

Tasting Note

Colour: Golden amber.

Nose: Lively sugar cane, ripe pears and dried apricots, complemented by vanilla and subtle citrus notes.

Palate: Intense and complex, with sweet pear, creamy caramel and vanilla, as well as cedarwood and subtle nutmeg.

Finish: Long-lasting and spicy with a distinct woody structure, apricot and a soft, lingering vanilla note.

The Habitation Velier Rainforest 2024 is best served neat at room temperature in a nosing glass; however, due to its high alcohol content of 58% vol., a few drops of still water can help to unlock additional flavours. It pairs well with savoury dishes such as grilled pork, hearty poultry dishes or mature cheeses, which can hold their own against the rum’s intense character. Suitable sweet accompaniments include pear or apricot desserts, roasted nuts, and desserts featuring vanilla or caramel. This makes the bottling particularly well-suited to rum tastings and quiet moments of indulgence, where the unusual influence of the Chardonnay casks can take centre stage.
