Pastis 51 Pastis de Marseille 45% vol. 0.7 l is a classic pastis hailing from the sunny region around Marseille. This aniseed-flavoured spirit, which is very popular in France as an aperitif, offers the authentic flavour of Provence and reflects the tradition of Provençal spirits. Pastis 51 is made from a carefully selected blend of aniseed and other herbs, which give it its characteristic, intense flavour. With an alcohol content of 45% vol., it has a robust yet harmonious flavour and really comes into its own when diluted with cold water.

The ‘louche’ effect?

A milky cloudiness when water is added – known as the ‘louche’ effect – is caused by the essential oil athenol.

The addition of water releases the oils, which were previously enveloped by the alcohol, causing the drink to become cloudy.

Tasting Note

Colour: Golden yellow with a slight sheen.

Nose: Dominant notes of aniseed, herbal notes, fennel.

Palate: Full-bodied and spicy, aniseed, a hint of sweetness, herbs, fennel, harmonious depth.

Finish: Long-lasting, spicy, mild on the palate with an intense herbal note.

Pastis 51 is traditionally enjoyed as an aperitif, mixed with cold water and ice to bring out its full flavour. It is also an excellent choice in cocktails such as the classic Pastis 51 & Tonic or Pastis Sour. This pastis is also an excellent accompaniment to Provençal dishes such as seafood, aubergines or goat’s cheese, which underlines its deep connection to the flavours of the South.
