The Caol Ila 12 Years Old is one of Islay’s most notable whiskies and forms part of the famous Classic Malts of Scotland range. The malt is clear and white-gold in colour, thanks to its classic maturation in oak casks and the use of colouring to harmonise the hue. Tasting Note

Colour: White gold.

Nose: Delicate citrus notes, fresh maritime aromas, subtle hints of muslin, a pinch of tobacco and increasingly intense smoke.

Palate: A fine, smooth texture; initially a mild sweetness, which is quickly replaced by intense peaty smoke and subtle tropical fruit notes.

Finish: Long, crystal-clear and persistently smoky.

This Islay malt pairs superbly with smoked foods such as salmon, mackerel or BBQ dishes, as well as with strong cheeses such as Cheddar or blue cheese. Lemon tart, dark chocolate with sea salt or roasted nuts also complement its maritime smokiness particularly well. When paired with oysters or seafood starters, its salty freshness unfolds impressively. Neat or with a few drops of water, it reveals its complex layers of sweetness, smoke and maritime nuances, which linger in the glass.
