To produce it, selected Forastero and Trinitario cocoa beans are macerated in neutral alcohol, allowing their characteristic cocoa flavours to be extracted. The resulting macerate is then distilled and bottled without sugar or any other additives. This produces not a sweet liqueur-style drink, but a dry, high-proof chocolate spirit at 40% ABV, in which the unadulterated aroma of the cocoa beans takes centre stage.
