Raki, Turkey’s renowned national drink, is an indispensable part of Turkish celebrations. Whether it’s a relaxed meal with friends at home, a large party or a dinner at a restaurant – Raki enriches every social gathering with its distinctive character.

This prized spirit has a tradition dating back some 300 years and is produced in Anatolia from carefully selected ingredients: aniseed, pure white granulated sugar and soft spring water. These components give raki its unmistakable aroma and delicate flavour.

In the first stage of the distillation process, selected grape varieties from Anatolia are processed. These grapes are harvested when ripe, dried and then fermented. In the subsequent second distillation stage, high-quality Pimpinella aniseed is added to the resulting ‘suma’. This step is crucial for the development of the flavour, as the aniseed complements the aromas of the grapes perfectly.

Tasting Note

The flavour of raki depends mainly on the quality of the grapes and the aniseed used. As aniseed dissolves completely in alcohol, it is invisible in raki but can still be clearly smelled and tasted. The white cloudiness – which has also earned raki the name ‘lion’s milk’ – occurs when water is added to raki.
