The Hillinger HILL 3 2024, 8 % ABV, 0.375 l, is a noble sweet Trockenbeerenauslese of exceptional intensity, balance and aromatic depth. As the sweet flagship of the Burgenland region’s premier winery, Leo Hillinger, this wine combines the finest craftsmanship, maturity and complexity in a powerful, elegant composition that impressively showcases the potential of Austrian sweet wines.

The grapes for HILL 3 come from selected Lagers and are harvested by hand when they have shrivelled significantly due to noble rot (Botrytis cinerea) and are highly concentrated. The long fermentation, lasting 4 to 5 months in stainless steel tanks, ensures the gentle development of the full spectrum of aromas. The wine then matures for around 12 months in casks or tanks, gaining additional complexity, structure and an excellent balance between sweetness and acidity. With an alcohol content of just 8 % vol., yet intense aromas and opulent concentration, it has a remarkable ageing potential of 10 to 20 years.

Tasting Note

In the glass, the HILL 3 glows with an intense golden-yellow colour. The nose is complex and beguiling, with aromas of blossom honey, dried pineapple, ripe apricot, elderflower, banana and mint. On the palate, it displays a dense, charming sweetness, underpinned by a lively, fresh acidity that balances the wine and lends it elegance. Notes of camomile, honey and dried fruit accompany the long, seemingly endless finish – a prime example of a great Trockenbeerenauslese, combining freshness, power and finesse.

The HILL 3 is the perfect accompaniment to a variety of desserts and cheeses, particularly blue cheese, Camembert with noble mould, flambéed crème, apricot tart, or even as a sweet counterpoint to a strong espresso.
