Manufacturing & Craftsmanship

Bijito is a Junmai Ginjo, which means it is made exclusively from rice, water, koji and yeast, with no added alcohol. The rice is polished to 60% to remove unwanted components and bring out the delicate flavours. Fermentation takes place at low temperatures to preserve the subtle flavours.
