Unlike many other mezcals, Zignum Mezcal avoids a strong smoky flavour. Instead of being cooked in earth ovens, the agave is gently steamed in modern steam ovens – a process that preserves the agave’s natural character and produces a particularly pure, mild flavour. After fermentation, distillation takes place in copper stills – always in small batches and under strict quality control.

Zignum Mezcal is one of the few mezcals produced at a LEED-certified facility. The distillery focuses on water treatment, energy efficiency and the recycling of organic waste. The aim: to produce exceptional mezcal with a minimal environmental footprint.

Zignum is produced in the state of Oaxaca, where the climatic conditions and mineral-rich soils provide ideal conditions for agave growth. The agaves are sourced from sustainable farms in the surrounding regions.
