The rum is named after Don Papa, one of the lesser-known heroes of the Philippine Revolution. As a foreman on a sugar cane plantation, Don Papa fought for his country’s independence and became a leader in driving the invaders out of his beloved homeland. Don Papa hails from the island of Negros in the Philippine archipelago, and this exceptional rum not only honours the heroes of the revolution but also celebrates the traditional craftsmanship of Philippine rum production.

Don Papa Rum Sherry Casks is made from high-quality sugar cane grown on the fertile, volcanic soils of Negros. After initial maturation, it is aged for seven years at the foot of Mount Kanloan in American oak casks, which gives it a harmonious base. It is then given its distinctive finish in a blend of Palo Cortado, Fino, Cream and Pedro Ximénez sherry casks, which lend the rum additional depth and complexity.

Don Papa Rum Sherry Casks offers a powerful yet balanced flavour with fruity and sweet notes, beautifully complemented by a subtle oakiness and sherry notes. With an alcohol content of 45% ABV, it is ideal both for drinking neat and for use in cocktails.

Tasting Note

Colour: Deep, bright amber.

Nose: Complex aromas of dark fruits, raisins, caramel and a hint of oak and spices. The sherry notes of Palo Cortado and Pedro Ximénez lend it an extra layer of sweet and fruity depth.

Palate: Full-bodied and rich with sweet flavours of caramel, dark berries, dried fruit and a pleasant oaky spice, enhanced by the sherry cask finish.

Finish: Long and warm with a warm sherry finish, accompanied by oak and a subtle spiciness.
