Production takes place in small batches using traditional methods: the agaves are cooked in earth ovens, crushed using stone mills and then naturally fermented before being distilled in copper stills. The long ageing period – well above average – produces deep woody notes, balanced toasty flavours and a smooth texture, whilst retaining the typical freshness of the agave.
